Nature's Nectar arranged a kids' cooking competition called HumBeeChef from 17th June to 20th July 2022. Due to honey's nutritious value, children were asked to make a variety of honey-based recipes. For a healthier future, student chefs were encouraged to incorporate honey into their dishes.

Honey flavoured cake is hugely popular in South India and is generally served as a condiment slice in many bakeries. The coconut flavor on top recreates the feeling of being on a tropical island while strawberry punch gives a hint of berries’ season on full bloom and honey adds a little bit of health satisfying your sweet cravings too. These slices of honey cake can be ideal for any occasions and can be an instant hit with kids.

Ingredients

For this yummy honey cake, we have taken strawberry jam, but you can also use other flavoured jams like raspberry/pineapple/ mixed fruit, etc. along with the following ingredients:

  • ¾ cup curd
  • 1 cup sugar
  • ¾ cup oil
  • 1tsp vanilla essence
  • 2 cup all-purpose flour
  • ¼ tsp baking soda
  • 1 tsp baking powder
  • ½ cup milk
  • ½ cup acacia honey
  • ½ cup strawberry jam
  • Desiccated coconut
Preparations
  • In a large mixing bowl, take curd, sugar, oil, and vanilla essence. Whisk for 5-6 minutes.
  • Sieve flour, baking soda and baking powder to curd mix. Mix well using cut and fold method.
  • Add milk to attain required consistency of the batter. Transfer the batter into a greased cake tin. Bake the cake at 180 degrees Celsius for 40 minutes.
  • After taking out from the oven, let it cool down a little for a while and then pour the honey over cake and let it seep into the cake.
  • Now, spread a generous amount of strawberry jam over cake and level out forming a frosting.
  • Sprinkle desiccated coconut and cut into equal pieces in any shape of your choice. Serve it immediately.
